The Axe are thrilled to announce our involvement with Sponfest - a week-long celebration and showcase of the very best in wild and traditionally fermented food and drink from the UK and beyond. Taking place across four venues in London - The King’s Arms, The Axe, The Mermaid and TT Liquor from April 16th – 22nd.
As part of the 7 days we will be presenting some of the best of British producers of wild and mixed fermentation, with a Wild Beer Co tap takeover and restaurant guest spot by Som Saa + Shep's on Wednesday 18th April.
Plus a fermented farmers market on Saturday 21st April, featuring local produce from local producers. Sourdough bread from Dusty Knuckle, salami and meats from Cobble Lane, pickles and ferments from Eaten Alive, cheese from Provisions and Kefir from Ferment Revolution. And an evening celebration of British wild fermentation and barrel-ageing innovations, including the Tempus Project from Beavertown, the blends and barrels of Burning Sky, alongside an excluding tasting with Tom Oliver, one of the world's most celebrated cider-makers.
There are many more events happening across Sponfest week, including an evening of rare Kernel barrel-aged saisons, and traditional fermented foods from Jack Sorrell - head chef of Primeur at The Mermaid, an introduction to natural wine with one of Norway's most renowned black metal musicians, a fermentation masterclass with Kylee Newton + much more. Recently KCBC have been over to the UK to collaborate with Hackney Brewery, along with Northern Monk, Verdant, Beavertown & Brew by Numbers.
On Friday 23rd February The Axe will be launching their Hackney collaboration beer: Sleeping Giants. A New England Pale Ale coming in at 5%, dry hopped with Citra, Calypso, Huell Melon & Mosaic, it’s a juicy tropical marvel. Along with the Hackney guys, we will be joined by one of the KCBC founders Zack Kinney, who is bringing over 5 super-fresh air-freighted kegs plus 3 ripe and ready cases from the States.
